More about Greens

You may have eaten spinach or romaine lettuce before, but what about all of the other leafy green vegetables? There are many greens that could add variety to your diet! Keep reading to learn more.

The next time you are in the grocery store or at the farmers’ market, keep an eye out for any of these yummy greens:

  • Collard greens
  • Mustard greens
  • Turnip greens
  • Beet greens
  • Swiss chard
  • Arugula
  • Bok choy/Pak Choi
  • Kale

These veggies are packed with vitamins and minerals, and will help you to feel full. Most are sold by the bunch, while some of the ones with smaller leaves are in bags or plastic cartons. In some stores, you may also be able to buy greens, like collards, pre-chopped in a bag.

Always choose the greens that look bright green without yellow spots, and are crisp, not wilted. Once back home, store your greens wrapped in a paper towel in a plastic bag. If your greens happen to wilt after you bring them home, trim the stem ends and stick them in a sink or bowl filled with cold water for around 30 minutes. They should perk right back up! 

When it is finally time to eat your greens, you can have them at breakfast, lunch, or dinner. For a bright start to your day, saute some chopped greens in a pan and then stir in whisked eggs to make “green” scrambled eggs. Or add them to a morning smoothie. Make some Kale Chips and Lentil, Mushroom, and Swiss Chard Soup to bring in for lunch. Any greens would be delicious in our Garden Stir-Fry recipe for a quick dinner.
